Summertime is snacking time. I don't know about you but I don't like eating big and heavy meals when it's 30 °C outside. I rather snack my way through the day or let's say till dinner. Rice cakes are my go to snack in summer. Now you are thinking 'rice cakes?!' Yep, with the right topping, they will blow your mind.
Nourishing my body with fresh and healthy food is really important to me, whether I snack my way to the top or eat a full on meal.
Summer (and Spring) is also the time, where everyone tends to be more active and wants to look their best, which is awesome.
So here are some topping ideas for your rice cakes, that will keep you lean and keep you healthy
so let's snack, snack, snack!

 

Not all of these toppings are vegan, but you can easily replace them with vegan alternatives. All the toppings are vegetarian. 

Berry Parfait Rice Cake

This Berry Parfait Rice Cake is currently my go to breakfast. I'm normally not a breakfast person but since working out more I needed a little something in the morning and this berry parfait is perfect. It's super light and so quick to make. I used raspberries, but you can use whatever berry or fruit you would like.

Hummus & Spinach Rice Cake

Who doesn't love hummus?! Homemade hummus is just the best topped with some spinach, mozzarella, and tomato it's the perfect little snack between breakfast and lunch.

Peanut Butter & Banana Rice Cake

Peanut Butter and Banana Rice Cake is my favorite pre-workout snack. I can't really eat a lot before I workout but I also need a little something to get me going. This little snack is perfect! It's not a heavy breakfast it's just a little something that gives me the energy I need for my workout. And I just love the combination of peanut butter and banana.

Tomato & Mozzarella Rice Cake

A classic! I've been eating this as a child non-stop. I just love the mix of tomato, mozzarella with a little bit of basil and balsamic vinegar...perfect.

Disclaimer: It's obviously not enough to only snack all day. If you are like me and you have trouble eating in summer, especially at lunch time, make sure to have a big breakfast and/or a big dinner and include your healthy snacks whenever you need a little something. Starving yourself is never an option. You need to give your body what it needs. And trust me, starving yourself will not give you the body you desire! Lots of healthy food and beeing active will.
