One of my new year's resolutions for 2018 is to try new things in the culinary world. I used to think that I don't like cauliflower even if I didn't have it for years. So I thought I would give it a try and made this vegan cauliflower soup. You only need a few ingredients to make this beautiful creamy soup. It's so light and perfect for lunch or a cozy night in. I'm really into soups for dinner lately. There is nothing better than having soup to warm you from the inside out. 

The two main ingredients of this vegan cauliflower soup are cauliflower (duh) and coconut milk which makes the soup extraordinarily creamy and tasty. 

Add a bit of olive oil to a pan and sauté your onion and cauliflower. After that include your vegetable stock and let it cook for 25 minutes until your cauliflower is really soft. Now add the cauliflower and your coconut milk to a blender and blend until evenly combined. Put the soup back into your pan and heat it up one more time. Season the soup with salt and pepper and garnish it with some pomegranate seeds. Done! I mean it's super easy, right?

Ingredients

  • 1
    small head
    cauliflower
  • 1
    onion
  • 2-4
    tbsp
    pomegranate seeds
  • 150
    ml
    coconut milk
  • 400
    ml
    vegetable stock
  • salt
  • pepper
  • olive oil

Instructions

  1. put a bit of olive oil and sauté your onion and cauliflower

  2. add your vegetable stock and let the cauliflower cook for about 20 minutes until the cauliflower is really soft

  3. add the cauliflower to a blender and add your coconut milk; blend until you get a smooth texture 

  4. put the soup back in your pan and heat it up for a few minutes.  

  5. season with salt and pepper and garnish with pomegranate seeds
