Fall is just around the corner and I'm really craving these fall flavors. So what is better than a vegan and glutenfree coconut lentil curry.
The coconut lentil curry is so easy to make. You only need one pot and in less than an hour, you'll have a wonderfully creamy curry. This curry even tastes better the day after. I always make a big batch and freeze some, so I always have something on hand.

Cut your red onion and put it in a pot with some coconut oil. Add your crushed tomatoes, salt, and ginger and let it cook for 5 minutes. It's time to add 3 cups of water, your lentils & cayenne powder to your pot and bring it to a boil. After a few minutes reduce the heat to low and let it cook for 40 minutes ( until your lentils are soft). Meanwhile, cook your rice. When your lentils are soft, add your coconut milk and your cherry tomatoes and let it simmer for 10 more minutes. Serve your coconut lentil curry with some rice and half a lime.
