So it's finally here...SUMMER!! I don't even know where to begin to tell you how much I love summer. Heat, beach, cute dresses, outdoor activities, vibrant salads, light meals and this list could go on and on and on. You see, I love summer.
I don't really like having heavy meals during the summer time so I put together these 4 light vegan summer recipes // lunch & snack ideas.
All these recipes are vegan and really easy and quick to make (under 30 minutes). They also require only a few ingredients, so they are really budget friendly.
So this is probably my favorite dish of all 4. I love gnocchis in general but the combination of gnocchi, spinach, and tomatoes is soo good.
The sundried tomatoes really make the dish. Trust me, give it a try.
Cut your onion, carrots and sundried tomatoes and add them to a frying pan with a bit of olive oil. After a few minutes add your sliced tomatoes. Let that simmer for a few minutes. Add your gnocchis. When the dish is almost done add your baby spinach and let it simmer for two more minutes.
This sandwich is perfect to take to school or work. It doesn't require a lot of preparation but it's a little fancier than just a normal plain sandwich. and the best you get your greens in.
Toast your bread. Put your chickpeas and avocado into a bowl and smash them till you get a smooth paste. Spread your chickpea avocado paste onto your bread. Add the spinach on top. Enjoy!
So this dish is so quick to make and you get a full on meal in such a short amount of time. And I mean it's pasta .... who doesn't love pasta, right?! I sometimes get a little bored of pesto so it's nice to switch it up a little.
Start cooking your pasta. Meanwhile, prepare your creamy avocado sauce. Add your avocado, basil, olive oil and lemon juice to a food processor or mixer and mix till you get a smooth texture. when your pasta is cooked add your sauce and DONE!
This might not be the most aesthetic looking dish but believe me, it's so yummy.
Spread your avocado onto your tortilla. Put your black beans into a bowl and smash them till you have a nice paste. Add the paste the sliced tomatoes and the vegan cheese on top of the avocado paste and put another tortilla on top. Put it in a pan and cook each site for 5 minutes.
